Today is St. Patricks Day, so I had to whip up something green! You may have green on, but do you have it in you?
A healthy dip with all things green! Spinach, Cilantro, Avocado, Yogurt & Lime all together with a few others to add some zing & zang.
A few years ago, I would be found at the nearest pub, drinking everything Irish! These days it’s all about how the heck can I get healthier? Woke up this morning with this dip on the brain. It’s especially rewarding when you think of something & have all the ingredients under your roof to put it all together. It made a tasty breakfast. It’s a perfect start to your traditional corned beef & cabbage dinner.
Just pop it all into your blender or processor & let it do all the work for you. Easy peasy.
I had an english cucumber on hand, so I sliced it up & popped some of this greeny green dip on top. This would be great to serve at any gathering with your favorite seedy chips & crudite.

- 1/2 avocado
- 1/2 can chick peas, rinsed & drained
- 1/2 cup plain greek yogurt
- 1/2 lime juice
- 1/2 cup packed spinach
- 1/2 teaspoon cumin
- 1 clove garlic, minced
- 1 pinch of sea salt
- 1 tablespoon olive oil
- 10 leaves cilantro. (optional)
- Add all ingredients into blender or food processor & blend until creamy.
