Sun-dried tomatoes, tahini & zucchini are the main characters that make this a very unique yet tasty combo.
This is a great alternative if you are avoiding beans for inflammation purposes. This is something I recently learned about while participating in my first ever 15 day detox provided by Kim Murray with Murray Wellness. I decided to do this for myself due to my recent diagnosis of hypothyroidism now Hashimoto’s. This has been a two year battle for me so far and I refuse to take medication to cover the symptoms of something that obviously can be resolved without it. Through the change of my diet I can reverse these symptoms & kiss this disease goodbye. It’s going to take some time & due diligence. Changing our eating habits maybe one of the hardest things in life since we are faced with daily issues that void us from time to prepare simple fresh foods. Just think, the amount of time it takes to prepare a simple dinner & enjoy it in the company of loved ones can be something that makes our entire day, bad or better. The best part about this is that we are doing something wonderful for ourselves & families. This is something I’m doing daily regardless. The difference already in that change alone has done so much for my daily way of living, not to mention I feel so much better than I have in years.

^ just buzz it all together in the trusty ole’ food processor, (mine is on its last leg)
^ makes a great after work or school snack.

- 1 zucchini
- 1/2 cup tahini
- 3 sun-dried tomatoes
- 1/4 cup fresh or dried basil
- 1/2 teaspoon sea salt
- 1 teaspoon black pepper
- 1 garlic clove
- 1 tablespoon apple cider vinegar
- 1 lemon, juiced
- 1/4 to 1/2 cup water as needed
- Blend the ingredients together in a food processor or blender. Add water until desired consistency is reached.
