Super easy to make… spices & yogurt make a great marinade, then easily broiled for a quick & flavorful meal.
I’ve been participating in a fitness challenge group, designed specifically for moms, pregnant or not & I became inspired to create something easy I could share with them. This simple dish can be put together in minutes, especially since we are mostly pre-prepping our meals in the beginning of the week.
I mixed together some of my favorite spices, (any combination would do) with a cup of greek yogurt & piled it on the skinless, bone-in chicken thighs. I covered it & refrigerated it until the next day, when I broiled it on high for 10 min. each side.
I’ve been eating really well in the past year, mainly purchasing boneless, skinless, organic chicken breasts which quickly add up in price. I’ve been learning so much about how to better my grocery budget as it seems like I spend so much just for a weeks worth of organic goods. I’ve had to learn how to cut some corners & I’ve got to say… there’s an art to cutting that grocery bill in half. I can see how these coupon’ers take it to the extremes. It feels good, like really good, to know I’m saving hundreds of dollars a month in groceries. All it takes is a little planning & researching where the best weekly sales are, then add coupon-ing on top of that, you are almost getting goods for free. Now, instead of planning my menu & shopping, I seek the sales, then plan my weekly menu.
Here is an example dish, I bought chicken thighs on sale, the skin was on which I easily removed & took notice in the price diff. between skin-on & skinless. $6. Quite a difference – the skinless was not on sale either.
I’m also not apposed to eating dark meat, a little bit doesn’t hurt. It sure is flavorful as well as a nice change from the same old lean chicken breast.
I generally prep a good bit of food on Sunday’s so that it makes weekly meal prep easy. I pre-roasted two sweet potatoes & made a batch of brown rice to have on hand for days like this. This meal was ready in twenty minutes.
- 4 bone-in skinless chicken thighs
- 1 cup plain greek yogurt
- 1 teaspoon curry powder
- 1 teaspoon tumeric
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt
- In a medium bowl, combine yogurt & spices well.
- In a container, spread the spiced yogurt on the base of the dish & add the chicken, coat really well with the spiced yogurt. Cover & refrigerate for 1 hour, up to 24 hours.
- Set the oven to broil & place spiced chicken on roasting pan & broil 10 min. each side.
- Serve with any sides you like!
