Double Chocolate Peppermint Cookies is a recipe I used to enter into a cookie contest for the Mom’s Club.
I saw this recipe in the December 2016 issue of Martha Stewart’s Living Magazine. I have no idea how I receive so many magazine subscriptions, but I do & I hate to have any go to recycling until I fan through them.
These Double Chocolate Peppermint Cookies were nowhere near as simple as I was anticipating. I had been going all week & thought that I could get them done in no time the morning of. Not quite.
I woke up at 4:00 AM with my little for a bottle & put him back down. Then I thought that I might as well stay up & get to work on this recipe. I mixed the dough & placed it in the fridge before rolling & cutting it out.

I had difficulty rolling this out. I panicked a little in fact. The time was getting away from me as I left the dough in the fridge for over an hour. With the help of a friend, (who is a pastry chef by trade) I rolled the dough into a log so that I could cut them out. The recipe from Living is enough to make about 10 of these at this size. I double the recipe & scaled down to size & got about 55 bite-sized cookies.
