This is one of those recipes that has been on my list of things to post. They are super simple & extremely versatile that will quickly become a favorite for everyone!
I’m testing out recipes this week to serve at my baby shower this Saturday. This is one of them. I wanted to whip up a batch to figure out if this is the way I want to go these, size wise. I’m thinking I’ll go even smaller…
Ingredients for these today were those that Adam loved, Turkey, Swiss, Shredded Cheddar & Fresh Parsley. I love it when he likes what I make for him. It’s a really great feeling! (His mom liked them too!) Salsa for Kids was the perfect condiment to go along with them.
As I mentioned before, these are super simple to make, you can whip them up easily in the morning before you reach for that morning coffee & they will be ready at the same time. Yes, really! They are that easy! The best part about them is that you can use whatever you have laying around in the fridge that you’d like to use up, this gives those things a chance to perform once again! If you have kids in the house, using something like these ingredients can be a big hit with them.
I sprayed my muffin cups with organic non-stick olive oil spray & ladled in the egg mixture. I popped them in the 375 degree pre-heated oven for 15 min. They puff up just like real muffins & quickly deflate as they cool. One tip to mention is that when you whisk them together, whisk vigorously to incorporate a good amount of air. One more thing, using a fattier milk, even half & half or whipping cream will add a richness in texture & more flavor. I used a 1% milk as that was what I had at the time. No one would know & a little bit better for you if you choose to go that route.
Today was the last day for us to have Adam during his spring break & when his mom picked him up, I surprised her with this “brunch lunch.” The three of us had a great time & I look forward to hearing how theirs turn out tomorrow.

- 6 eggs
- 1/3 cup of milk
- 1/2 cup sliced swiss cheese, diced
- 1/2 cup turkey deli meat, diced
- 1/2 cup shredded cheddar
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon sea salt
- cooking spray
- turn the oven on to 375
- spray 8 muffin cups with non stick cooking spray, or brush with olive oil
- in a large bowl, crack open eggs, add milk & salt
- whisk well, like you really mean it
- add the rest of the ingredients, (whatever you want, really)
- ladle into muffin cups just a little over 3/4 of the way full
- bake for 15 min, keeping an eye on them the last 3 min, you want a light golden brown color
