Today is Easter Sunday & I felt compelled to create something festive to celebrate this Smoothie Sunday! I’m really loving this one, read more to find out why…
Kale just seems to be a bit over rated these days, yet it’s still so good for you. Some of the nutritional values are that it is high in iron, vitamin k, a & c. It is high in powerful antioxidants, calcium & fiber just to name a few. Being 33 weeks pregnant at this point in time, I’m in need of more iron in my diet, (I’m taking iron supplements) not to mention calcium & fiber. Just put it this way, I’m going to eat this stuff for a while knowing all the nutritional benefits for my current situation.
The tip I have to share for creating this masterpiece is that in order to avoid the grittiness that kale can sometimes offer in it’s raw state is to flash steam it so that it’s in a softer, more malleable form. That way when its time to blend, it breaks down easier & truly becomes more enjoyable in its liquid state.
Using frozen pineapple & banana adds just the right amount of subtle sweetness & balance. The acid from the pineapple & yogurt totally bring this together along with a tiny bit of richness from the unsweetened coconut/almond milk. Oh man, it’s so good! (my reaction after tasting it).
One thing is for certain, if I didn’t have my Magic Bullet NutriBullet 12-Piece High-Speed Blender/Mixer System, I wouldn’t know what I would do. I’m on my second one as I’ve used them just about everyday since owning the first one. I’m entering my second year with my second & hope to get more time out of it. It’s really convenient to create smoothies & shakes as the cup they are made in are meant to go with you & comes with a handy lid that screws right on for easy portability. I pack this sucker up when I go on trips too. I can’t recommend it enough!
Today was a beautiful Sunday in reflection of the holiday. My family & I spent some good quality time outdoors & we even snuck in a neighborhood easter egg hunt. (more like a race to who finds the most eggs first).
Adam loved this smoothie too, btw. A great way to sneak some extra nutrition into the kiddo’s!
- 1 cup frozen pineapple
- 1 banana
- 1/2 cup flash steamed kale
- 1/2 cup greek yogurt
- 1 cup unsweetened coconut/almond milk
- Add everything in your blender & buzz for 3 minutes to make sure the kale blends in really well.
