A simple way to prepare a delicious side that pairs well with everything. These roasted carrots can be made in a pinch, no one will deny them.
I’m in the process of creating a simple five day clean eating menu & I’m testing some recipes this week. My goal is to include ingredients that can be used a few times over in different dishes. I’m also striving for easy prep so that the remainder of the week will be stress free when it comes to what to make. It’s all about the planning…
Carrots are so under rated… They are so good for us yet seem to be neglected by many. My idea for them in my five day clean eating menu is that they be enjoyed raw with Black Bean Dip, roasted as a side to accompany Chicken with Thai Peanut Sauce & made into a delicious Carrot Cumin Soup.
The key to a successful week of eating well is in the prep. I believe that creating a menu for the week ahead by looking whats in the fridge & pantry helps in mapping out meals so that a shopping list can be easily made. I like to do this on Friday morning… I make my list, head to the store then prep when I get home.
These take no time at all. Cut & toss them in a large bowl, add a bit of olive oil & salt then roast them in the oven at 450* for 15 min. They come out at the perfect consistency, perfectly roasted.
Store them in the fridge to enjoy on the side of any main meal, toss them in a salad or turn them into a soup!

- 6 med. to large carrots
- 1 tbs. olive oil
- 1/2 tsp. sea salt
- Turn oven to 450.
- Cut carrots slightly diagonal about 1/2 inch.
- Toss carrots with oil & salt in large bowl.
- Spread them on a lined baking sheet.
- Roast for 15 min.
