A Simple gazpacho is something I very much look forward to making in the warmer months. I love the vibrant flavors all blended together which really wake up my taste buds after a long winter.
We had to check out Grant Park Farmers Market to see what goods we could get our hands on.
Once we got home I had a craving for something to cool me down. GAZPACHO!
I decided to put my handy Magic Bullet NutriBullet 12-Piece High-Speed Blender/Mixer System to good use. I swear by this thing. No need for a juicer or blender because this does the work of both of those with super easy clean up!
Just add all the ingredients to the cup & pour your favorite tomato juice & boom! You have a delicious, refreshing & simply delicious GAZPACHO.
Some like it chunky in which case I do too sometimes, depending on my mood, but today I was ready for something quick & simple, so this is what I came up with.

- 3 RIPE tomatoes, cored and diced
- 1/2 english cucumber, peeled and sliced
- 1/2 vidalia onion, diced
- 5-10 leaves of fresh basil
- 2 cloves of garlic, minced
- 2-3 cups tomato juice
- 3 pinches of sea salt
- Add all ingredients to your blender & chill in the fridge a few hours or until you want to eat it.
