How to make these… I like to steam the peppers before I stuff & bake them so that they become a little softer to cut into.
One big childhood memory that I have, is that my great aunt Katherine made Stuffed Peppers with rice, beef & cheese. Lot’s & lot’s of cheese, I think that’s why I may have loved them so much. I remember vividly as I was eating them that I have to learn how to make them as I grew older. I did, & this is the healthier version of them.
Instead of rice, I use quinoa. Along with onion, garlic, diced roasted carrots, peas & queso fresco. The whole purpose of creating my Free 5 Day Clean Eating Guide is to not only eat well with whole foods, but also to compose a menu with simple ingredients that can be incorporated into several dishes, used in different ways.
I’ve been diving into a healthier lifestyle after being pregnant & becoming a health coach, this is high on the list of my priorities. My main goal is to introduce clean eating to as many people as I can. You can workout hard for days, but if you don’t follow through with a healthy diet, then you won’t see results, at least not as quick as you would if you tailor your nutrition to fit your bodies needs as you continue to do your workouts.
What I’ve learned while on my journey to better health & fitness is that there is no need for “dieting,” just as long as you get the equal & necessary amounts of each food group. It’s 80% nutrition & 20% fitness that equals 100% of a healthy body.
I have a little bit to go. I’m really honing in on the month of September to reach my fitness goal. Little did I know the amount of effort needed to get back to my pre baby body, although I wasn’t completely solid on my diet towards the end of my pregnancy. I believe most moms can relate to me on that. I see this as an opportunity to prove to others that anything is possible. As long as you put your mind to it, stay committed then eventually you will succeed. Work at it little by little each day & soon will follow great results. The key is showing up everyday!

- • Red Bell Pepper
- • 1/4 lb. ground turkey, cooked
- • 1/4 onion, diced, (sautéed with garlic)
- • 1 tsp. garlic, minced
- • 1/4 cup quinoa, cooked
- • 3 tbs. crumbled queso fresco
- • 2 tbs. peas, steamed if frozen
- • 2 tbs. carrots, roasted
- • 1/2 tsp. ground cumin
- • 1/4 tsp. cayenne (optional)
- • dash of sea salt & fresh cracked pepper
- Sliced pepper down the center, remove ribs & seeds
- Steam for 5 min. until soft. Turn oven onto 400
- Combine all ingredients in a bowl along with a pinch of salt &
- pepper, then stuff into peppers, bake for 15-20 minutes
